Crock Pot Baked Potato Soup & More Soup Recipes


It's been quite cold lately here in Michigan. When it gets cold I like to warm my family up with a nice soup or chili. Yesterday I was trying to come up with something to make for dinner with the ingredients I had on hand. I had leftover baked potatoes and cream cheese in the fridge, so I figured that would be perfect to create a baked potato soup. It was easy to make in the crock pot and stayed warm until everyone came home from work or school. My family gobbled it all up, so I didn't even have any leftovers.

Baked Potato Soup in the Crock Pot
Ingredients:
7-8 baked potatoes (or use mashed potatoes for a creamier soup)
2 cups milk
8 oz. cream cheese, softened
bacon bits (or cooked crumbled bacon)

Optional - add onion, shredded cheese, or seasonings to taste

Instructions:
Leave the cream cheese out for a bit to soften or put it in the microwave for 15 seconds. Do not use cold cream cheese. 
You can peel, cut up, or mash up the potatoes, depending on how chunky you like your soup.
Combine ingredients in the slow cooker & cook on low for 1.5-2 hours, stirring occasionally.
