Skinny Mommy Muffins

I am known for never following a recipe.  So, this is my own version of skinny muffins.

I have a few tips.  Do not use muffin liners.  Use a spray to coat the pan.  Also, the honey is a pain in the butt, so work fast.

These are 4 points on Weight Watchers and 131 calories per serving.  Enjoy for a quick, pretty healthy breakfast.

Ingredients
2 1/2 cups of whole wheat flour  (Feel free to use any kind of flour you have on hand.)

1 teaspoon of baking soda

1/4 teaspoon of salt

1/2 teaspoon of cinnamon (I love cinnamon so I add a little extra.)

1/4 cup of honey

1/2 cup of light brown sugar

1/4 cup of any kind of yogurt

1 large egg, beaten

3/4 cup of milk

2 cups of any kind of fruit (I used frozen raspberries)

Directions     

1.  Preheat oven to 325 degrees.  Spray muffin tins with nonstick spray.

2.  In a large bowl, gently toss flour, baking soda, salt, and cinnamon.

3. In another large bowl, mix the honey, and brown sugar.  Add yogurt and beaten egg.  Mix all ingredients together.  Slowly add milk.

4. Fill the muffin tins and bake 17-18 minutes.  Check with toothpick.  Allow to cool.
