Low Carb Cauliflower Crust Pizza

I love to eat, but I seriously have to watch what I eat. So, I decided to try a cauliflower pizza crust. Now I'm not going to lie to you and tell you it was the best thing ever. It wasn't, but it wasn't bad and you can load all the yummy toppings you love right on top of it. As you can see, I loaded mine with sauce, ranch, feta, and Parmesan. So, here is to healthier eating. Enjoy!

For the crust:
1 head of cauliflower chopped in the food processor (see photo below)
2 egg whites
1 tsp salt
1 tsp pepper
1/4 cup Parmesan cheese

After you run it through the food processor it should look like this.

Place the cauliflower in a microwave safe bowl, and add 1 cup of water.  Cover and cook for 10 minutes.  Place the cauliflower in a colander lined with a dish towel.  Squeeze all of the water out.

Place the cauliflower in a bowl and add egg whites, Parmesan, and salt & pepper.

Line a pizza stone, or pan with parchment paper or coconut oil.  Parchment paper makes it easier to flip.  I skipped this step.

Press the cauliflower to make a pizza shape.   Cook on 350 for 20 minutes, or until golden brown.  You can also flip it to the other side and cook an additional 10 minutes.  I skipped this step because I didn't have parchment paper.  This will make a better more even crust than the first picture above.

Add your toppings, and cook additional time to melt your toppings.
