Cooking a Healthy Meal - Recipe Series

We all know what it's like. One minute your kids are quietly playing and keeping themselves occupied while you cook dinner. Then the next minute all heck is breaking loose. It's no wonder many moms find it difficult to get a healthy meal on the table, that is both nutritious and easy!
With a few simple meals under your belt, it's a bit more of a realistic goal. There's nothing more rewarding than your kids happily eating the healthy meal that you prepared them and actually thanking you for it.
Today's dinner menu is hummus chicken with sweet potato chips and roasted green beans.

Hummus Chicken
1 tbsp grape seed or canola oil
4 chicken breasts (fat trimmed off and cut into strips)
1/2 cup hummus
1 orange pepper (washed, seeded, and cut into strips)
1 tsp paprika
1 tsp oregano
1 tsp garlic powder
salt and pepper to taste

Coat a baking sheet with oil.  Add all ingredients to baking sheet and incorporate. I usually just mix them together with my hands. Bake at 425 degrees for approximately 45 min. until chicken is no longer pink.  It can be cooked in a skillet heated to medium high heat. Once pan is smoking a bit add oil, then add all ingredients. Cook until chicken is no longer pink, stirring occasionally.

Sweet Potato Chips
4 sweet potatoes (washed and sliced very thinly)
3 tbsp olive oil
Salt and pepper to taste

Add all ingredients to baking sheet.  Mix with your hands to incorporate.  These will go into the oven at the same time your chicken goes in. Bake at 425 degrees for approximately 45 min. using tongs to flip and mix around occasionally. 

Roasted Green Beans
1 pound green beans (washed and stems left on)
3 tbsp olive oil
Salt and pepper to taste

Add all ingredients to baking sheet and incorporate. Bake at 425 degrees for 45 minutes mixing around occasionally. 

As you can see in the first photo this meal was also served with a little left over mashed potatoes with cheese melted on top at the urgent pleas of my 6 year old.
